The Beer recipe (English at the bottom)

Ingredients:

1.5 kilo premium pilsner malt

1.5 kilo malted oats

0.5 kilo unmalted wheat

15 grams hops (from a local garden)

18 grams myrtle

approximately 5 hands full of leftover bread ()torn into small pieces

200 ml sourdough

200 ml yeast starter (of the most plain yeast we could find)

20 liters of water

Original text in Middle Dutch (spoken between 1200 and 1500 in the current Netherlands and Flemish-Belgian region):

Translation into modern Dutch:

Neem om goed bier te maken gelijke hoeveelheden gerst en wit graan (haver), naar gelang de kwaliteit van het bier; en als u dat wilt, doe er dan tarwe in. Maal die met de andere granen, zet een ketel water op het vuur en doe het meel van de genoemde granen in het water en roer door. Laat tot twee derde inkoken, haal van het vuur en laat het afkoelen tot het bloedlauw is. Breng het dan over in een vat; neem dan goede heef en ondergist, en voeg die samen. Neem het wort, meng de heef en de ondergist erdoor en roer alles goed door. Translation into modern English:

To make good beer, take equal amounts of barley and oats. For quality, you can add some wheat. Mill the grains together. Put water in a kettle and put it on a fire. Add the milled grains carefully and stir. Boil off one third. Take it off the fire and let it cool to blood temperature. Then put it in a barrel. Take good yeast and bottom-yeast together and mix it well with some wort. Put it in the barrel and let it ferment. The yeast will spill out from the top and on the third day the beer will be good to drink. Know that you need to add some hop, gale, and bread to the wort, and let it boil together.
