Welcome to the first episode of “In The Kitchen With…” a new series of Whistler podcasts where our intrepid food and drink editor Gilly Smith goes behind the scenes with the best, the most interesting, the most innovative chefs in Brighton. First up is the man known as the best chef in town, Duncan Ray of The Little Fish Market. He's worked with the best chefs in Britain over his 20 years in the industry, mostly famously Heston Blumenthal at the Fat Duck, and his Little Fish Market is the most highly awarded restaurant in the city; this year alone, it's listed in the MICHELIN Guide, it has 3 AA rosettes and is among the top 50 restaurants in Britain, according to Hardens. Locally, Brighton's. Best Restaurants have just crowned him Best Chef - again.

Andy Lynes and Brighton's best restaurants

This week we’re with Andy Lynes, food writer for The Times, Telegraph and The Independent and one of the people behind Brighton Best which, well, as it says on their website, Brighton’s Best Restaurants awards were set set up in 2016 to celebrate the city’s dynamic restaurant scene”. They’re also behind October Best, the city’s celebration of quality restaurants where you can eat for just £25 a head.

The awards come out in April and there’s a big interview with Andy in the next edition of your friendly neighbourhood Whistler about all that. We sent our intrepid reporter, The Whistler’s food editor Gilly Smith to meet him at The Chilli Pickle, The Whistler’s favourite to get his top tips for the Best places to eat in Brighton over the festive season.
